The 8Cr13MoV knife is made of a stainless steel that is comparable to the Japanese AUS-8. It has a low carbon content and a high chromium content, which gives it a great combination of toughness and strength. This knife also has good resistance to corrosion and can be easily sharpened to a razor sharp edge. While it may not hold its edge as long as the S30V steel, it is still quite close in performance to the 440B steel.
